Selected from a 2.4-acre parcel of our acclaimed Sleepy Hollow Vineyard, Fidelity Chardonnay is the pinnacle of the Talbott portfolio and a member-exclusive wine. Layers of tropical guava, mango and ripe pineapple balance beautifully with warm vanilla aromas of palmier cookies crackling with caramelized sugar. The palate exemplifies Sleepy Hollow’s signature elegance with notes of Honeycrisp apple and Bosc pear with dusts of cinnamon, clove and cardamom on a soft mouthfeel. The spice notes in our Chardonnay marry beautifully with Thanksgiving turkey or creamy pumpkin pie. When pairing, think of rich chicken, lamb and seafood dishes, such as classic Dover sole or Lobster Thermidor. For cheeses, try bleu cheese from Auvergne, France, silky brie or 5-year white cheddar.
